This coffee, coming from the cities of San Ignacio and Jaén in the Cajamarca region of northern Peru, is grown in the lush forests of the Andes at high altitudes (1200-1900 m). This special coffee, belonging to the 2023 harvest, offers a unique experience in its taste profile with grape, apricot, caramel, bright acidity and floral body. This coffee, consisting of Caturra, Pache, Catuai, Catimor and Bourbon varieties, was prepared with the washed processing method and proved its quality with a cupping score of 83.75. The Aprocassi Cooperative is a community of 32 producers in Cajamarca, founded in 2000. Adopting sustainable agriculture and gender equality, the cooperative encourages the participation of younger generations in coffee production, while continuing efforts to protect local biological ecosystems and combat climate change. Drawing attention with its reforestation projects, Aprocassi supports coffee production with an environmentally friendly approach. This coffee is a special option for coffee lovers with both its taste profile and sustainable production approach.
