Peruvian Cajamarca - Aprocassi Cooperative Coffee This coffee, from the cities of San Ignacio and Jaén in the Cajamarca region of northern Peru, is grown in high altitudes (1200-1900 masl), fertile soils and the clean air of the Andes. Obtained from varieties such as Caturra, Pache, Catuai, Catimor and Bourbon, this coffee offers a unique flavor profile with grape, apricot, caramel, bright acidity and floral body. This special coffee, harvested in 2023, stands out with its 83.75 cupping score and washed processing method. About Aprocassi: Founded in 2000, the Aprocassi Cooperative is made up of 32 producers in Cajamarca. The cooperative supports sustainable production by smallholders and trains community leaders to develop the local economy. Aprocassi, which prioritizes gender equality and encourages the participation of young generations in coffee production, also protects the environment through reforestation projects that combat climate change.
